Beauty, the Beast and the Feast: Fish tacos
JACKSONVILLE, Fla. -- Everyone could use a little help in the kitchen. That's why Chef Omar Collazo from Nippers Beach Grille is here to show us how to make some delicious fish tacos.

Fish Tacos
Ingredients
Fish
• 6 oz. Mahi Mahi Filet
• 1 Tbsp KG’s Raging Cajun Spice
• Oil
• 1 Lemon
• 1 t Garlic
• 1 t Shaved Shallots
• 1 Tbsp Butter
Tomatillo Pico De Gallo
• 1 Cup Tomatillo Wedges
• ½ Cup Sliced Red Peppers
• ¼ Cup Sliced Red Onion
• 1 Tbsp Fresh Ginger Minced
• 1 Tbsp Honey
• Juice from Half of a Lime
• 1 Tbsp Chopped Cilantro
• 1 tsp Ground Cumin
• 1 tsp Salt
Procedure Fish
• Combine Fish, Cajun Spice and Oil.
• In a hot pan sear the fish on both sides.
• Add butter, Garlic and Shallots and Base the Fish in the pan on medium heat.
• Squeeze Lemon on top of fish and let rest.
Procedure Pico De Gallo
• Combine all ingredients and mix together well.
Plating
• Warm up a 6 inch flour tortilla in a warm skillet
• Put Jalapeno Aioli and Cabbage on your shell
• Fish On top
• Garnish with Tomatillo Pico De Gallo and Lime
